The molecular weight of the obtained enzymes and peptides was assessed, and the substrate specificity of proteolytic enzymes was determined using a range of protein and chromogenic substrates. Their pH and temperature optima were also established. A qualitative and quantitative characterization of the obtained collagen was conducted, and its potential use as a basis for the development of collagen gels was evaluated. Additionally, the antioxidant and antimicrobial activities of the obtained peptide molecules were determined. Conditions and the most effective combinations of protein molecules and peptides were selected for the development of wound-healing agents in a formulation optimized for application to the wound surface, considering the phase of the wound healing process.
