A literature review has been conducted, research has been carried out into the influence of different industrial forms of carrageenan on the physicochemical properties of erythrocyte and leukocyte membranes, and it has been established that carrageenans of different structures have opposite effects, causing different changes in the phospholipid composition of erythrocyte membranes. It has been established that t-, k-, λ- carrageenans cause apoptosis, eryptosis, which depends on the development of oxidative stress and is Ca2+ dependent. It has been established that λ-carrageenan is the most powerful inducer of leukocyte apoptosis and eryptosis, which changes the cell volume, promotes the translocation of phosphatidylserine in the membrane and causes the accumulation of Ca2+ inside the cell.
