The object of the study is the process of cleaning pond fish carcasses from scales using the example of carp and common silver carp. The purpose of the work is to improve the cleaning of fish carcasses from scales using ultrasound and develop recommendations for the process. Research methods - analytical studies of scientific, technical and regulatory sources, experimental studies of the structural and mechanical properties of the scale-skin bond, a method of description and justification of scientific, practical and technical recommendations. The conducted experimental studies allowed us to determine the strength of the scale-skin bond for pond fish carcasses in their native state and to calculate the values of the coefficients k3 for carp and silver carp based on the experimental data, using which it is possible to theoretically calculate the strength of the scale-skin bond for carcasses of any weight groups. It was found that the greatest impact on the change in the scale-skin bond is during the action of ultrasonic vibrations with a frequency of 22 kHz. The use of the specified frequency reduces the duration of processing by 27...34% for carp and 24...29% for silver carp. According to the results of experimental studies, it was found that the rational duration of processing fish carcasses in the field of ultrasonic waves with a frequency of 22 kHz is 10...20 min for carp and silver carp carcasses. Recommendations have been developed for the process of cleaning fish carcasses from scales using the proposed design of the installation.
