Tairov" and optimal technological methods of preparation of "orange" type wines. Research methods: modeling of technological methods of preparation of wine materials, physicochemical, mathematical processing and analysis of the obtained results. Based on the results of the research, the influence of phenolic substances on the quality of wine materials and the most promising grape variety for preparation of "orange" type wines were determined. The process of accumulation of phenolic substances and extract in wine materials was simulated and the accumulation of phenolic and volatile substances was analyzed. Based on the results, technological instructions for the preparation of "orange" type wine materials from the Isklorka grape variety were developed. The introduction of this grape variety and processing technology into production will increase the economic efficiency of production by 10-15% and improve the ecological state of the environment.
