In this regard, much attention should be paid to establishing key indicators that functionally reflect the links between food products and the characteristics of the territory of its production, both its environmental conditions and genetically determined features of the local grapes and its microbiome. Thus, the aim of the study is to evaluate modern methods of terroir identification using the characteristics of the landscape and ecological conditions, DNA identification of soil microbiota, yeast component of berry microbiome, and objects of a phytopathological complex of vineyards. The identification of the terroir can be further used to determine the place of origin of the product, its authenticity, and its naturalness, including for the production of promising in Ukraine grapes and wine products with an indication of origin. popup.description2 It has been confirmed that wine yeast Saccharomyces cerevisiae is the most promising factor in terroir identification, since it combines soil, grape plant (vegetative organs) and berries as an object, generalizing the features of the weather conditions of the year, the location of the plot and grape variety in the quality indicators of wine. Analysis of the ecological conditions of vineyards in the regions of strain isolation (Odessa and Mykolaiv regions) showed the difference between the ecological conditions that are indicators of terroir identification and a kind of "background" for the emergence of genetic diversity of wine yeast strains Saccharomyces cerevisiae. Phylogenetic analysis of 64 wine yeast strains isolated on 36 varieties of technical use (plot - ITS1-5.8S-ITS2), which belong to the species Saccharomyces cerevisiae, demonstrated that the clustering of samples is mainly influenced by the year of isolation, i.e. agroclimatic factors as a component of ecological conditions. The isolation of the key component of the phytopathological complex of the vineyard as an identification factor showed that such a component can be fungal diseases of perennial grape wood due to the duration of the infection, the influence of weather factors on the intensity of the manifestation and, accordingly, on the quality of the wine. Among these diseases in the vineyards of Ukraine, black spotting is most often found, which causes a specific type of dying and, in recent decades, grapevine wilt.
