Patent No. 230201 has been obtained for the Perlyna common hop plant variety and patent No. 240515 for the Vityaz common hop variety. A model of aromatic hop products with defined biochemical and technological characteristics for use in bread baking has been developed. The parameters of technological processes for using hops in bread baking have been established, taking into account the dosage of bitter and other biologically active substances. The norms have been optimized and the calculation of hop consumption in bread baking has been proposed, taking into account the content of bitter alpha acids in it. The parameters of the influence of essential oil and its main components on the quality of beer have been investigated and the optimal conditions for flavoring beer with defined functional and technological characteristics have been established. Technological solutions for optimizing the processing of hop products in brewing have been developed, taking into account the content of bitter substances, essential oil and other valuable components in them. Protected by three utility model patents: No. 152590, No. 152591, No. 152935 and three invention patents: No. 129303, No. 129304, No. 129305. The antimicrobial activity of the hop essential oil substance against gram-positive, gram-negative microorganisms and yeast-like fungi has been studied and established.
