Purpose of the work – scientific substantiation of the design of combined products with increased protein content, improved amino acid composition, and high consumer characteristics based on the use of secondary products of oilseed processing. Research methods – the study of the physicochemical parameters of oilseed meals was carried out in accordance with GOST 13496.15, DSTU 7169, GOST 13496.2, GOST 13979.6, MVV 081/12-0243-05, MVV 081/12-0244-05, GOST 26927, MP 2273, GOST 28001, DSTU 4924, DSTU 8365. The amino acid composition was experimentally determined, and the biological value of proteins of the scientifically justified raw materials for combined products was calculated. The composition of model oilseed meal compositions and combined products based on them with improved amino acid composition was scientifically substantiated. The fatty acid composition was experimentally determined, and the biological efficiency of the fats in the proposed combined products was calculated. A methodology for the design of guaranteed nutritional and biological value of combined products based on secondary oilseed products was developed.
