The purpose of the work is to scientifically substantiate the methodology for obtaining structured fat products with a minimum content of trans-isomers of fatty acids. Research methods: experimental design, multivariate regression with response surface construction, standard methods for fat quality analysis, differential scanning calorimetry. The parameters of enzymatic transesterification (temperature, catalyst humidity, pH, mixture composition) were optimized using immobilized lipase Lipozyme TL IM. Rational conditions were established for maximum inclusion of ω-3 PUFA and minimizing hydrolysis. Mathematical models of the dependence of the melting point, the degree of transesterification and the formation of free fatty acids on the process parameters and raw material composition were developed. Rational formulations of fat systems with a melting point of 22–34°C and a trans-isomers content of <0.5% were determined. The oxidative stability of the obtained products was assessed.
