The object of the study is the technology for producing food products using plant-based milk. The subject of the study is plant-based milk derived from various raw materials and food products made with plant-based milk. The aim of the work is to develop technologies for food products using plant-based milk. The research methods included the application of modern theoretical and experimental approaches to address the objectives of the study. Theoretical research was based on mathematical modeling and optimization methods. The determination of physicochemical and organoleptic properties of raw materials and finished products was carried out in accordance with national standards. Experimental studies were conducted under laboratory conditions using specialized laboratory equipment as well as generally accepted and newly developed methods. Modern aspects of the production and use of various types of plant-based milk were analyzed, including soy, rice, hemp, coconut, buckwheat, cashew, hazelnut, and peanut milk. The properties of the main plant raw materials, production methods for plant-based beverages, their chemical composition, and functional characteristics were determined. Technologies for food products using plant-based milk were developed, their properties were studied, and the possibilities of processing by-products remaining after plant-based milk production were considered.
