After harvesting, fruits, vegetables and mushrooms remain living biological systems in which intensive metabolic processes continue. As a result, there is a gradual use of stored nutrients, a decrease in nutritional value, deterioration of organoleptic characteristics and loss of mass. The object of the study is the processes of loss of quality of fruit and vegetable products and mushrooms during storage with the use of biologically active substances. The subject of the study is technological approaches to post-harvest processing of fruit and vegetable products and mushrooms and the use of biologically active compounds to regulate their metabolic processes during storage. The purpose of the work is to scientifically substantiate and develop measures for post-harvest processing of fruit and vegetable products and mushrooms with biologically active substances, which ensure a reduction in quantitative and qualitative losses, stabilization of consumer properties and extension of their storage periods in refrigerated conditions. The objectives are: to substantiate the methodology for integral assessment of the antioxidant status of fruits, vegetables and mushrooms from the perspective of predicting their suitability for storage; to determine the principles of selecting the composition and concentrations of compositions of biologically active substances for correcting the antioxidant protection of products; to carry out experimental testing and assess the effectiveness of post-harvest processing and storage; to formulate practical recommendations for the use of biologically active substances in storage technologies for fruit and vegetable products and mushrooms.
