The potential of both priority and non-traditional aquatic organisms for the creation of innovative food products, including functional ones, was studied and analyzed. Lists of traditional and underused aquatic organisms for the creation of special and functional products were created. The toxicological state of carp fish of the Zaporizke (Dniprovske) reservoir was studied, and the sanitary state of marine species from the waters of southwestern Ukraine, namely the Odessa Bay and the freshwater Kuchurgan reservoir, which can be used as promising raw materials for the creation of functional products, was studied. Particular attention was paid to the impact of parasites on the quality and suitability of fish for processing within the framework of modern technological requirements, including HACCP (Hazard Analysis and Critical Control Points) criteria and sanitary standards for food products. Modern concepts and examples of growing non-traditional species of aquatic bioresources in the conditions of aquaculture of the Black Sea and estuaries have been developed. Recipes and methods for manufacturing innovative food products based on hydrobionts have been created. The results obtained are important for the creation and development of new methods and technologies in the field of processing aquatic bioresources, which will help solve existing and prospective problems of food security in Ukraine. The developed new food products meet modern requirements for the quality of food products, which is important for improving the quality of nutrition of the population.
