The presence of pronounced electronodonor properties in the phenol molecules and quantum-chemical investigations of reaction with peroxiradicals transitive state enable to determine the existence of structures with charge transfer from the phenol molecule to radical, the last eases the break of the reaction center bond and provides high antiradical activity of the substance. Received two parameters correlative dependence between ARA parameters of phenols and characteristics of mole-cules electron structure enables to forecast the ARA of other plant phenols and also to plan the synthesis of effective antioxidants in the space-troubled phe-nols range. Kinetics and mechanisms of plant phe-nols inhibitive action in free-radical chain process of oxidation of carbo-hydratepolymers, fats has been studied.
