The investigation includes the development and improvement of the methods of plant tissue processing, applying the chemical and bio catalysts; ion exchange chromatography and electrodialysis for purification of produced substances and their research with the methods of gel filtration, spectral analysis and computer chemistry. In operation the examinations of a kinetics of process of extraction pectic of polyuronides from a fodder water-melon, from a sunflower, apple sqeeze, sugar beet were carried out, are especial influences of a view hydrolytic amounting (GLA) and pH of medium, temperature, duration of a hydrolysis - extraction on an output of polysaccharides, the mathematical model of process of extraction designed. Observationally fixed that: the degree of extraction pectic of polyuronides from vegetative rawmaterial is enlarged with rising of temperature from 70 up to 900С and downstroke рН from 1,85 up to 1,1; the transition pectic of substances from vegetative raw material in a liquid phase practically comes to an end through 120 min. the ambassador of a beginning of hydrolytic split of a protopectin; optimum parameters of process of a hydrolysis are рН 1,5, temperature 800С, duration of 120 min.; process of extraction - temperature 800С and duration of 30 min.
