The review of the scientific and engineering publications of Ukraine, RF, USA, Canada, France and other countries is executed in the field of refrigerating know-hows of storage of the foodstuffs. The estimation of refrigerating know-hows on a consumption level of energy and nature of affecting on plants of storage is executed. Is installed, that in Ukraine a power consumption in coolers for storage of fruit and vegetables by capacitance up to 1500 tons. the total capacitance compounds which one 40% from communal, compounds 88% of a communal power consumption of all system of storage.The dependence between holding capacity of separate groups of coolers and their part in a communal power consumption is obtained. Is clarified, that the system of storage consists of coolers constructed in miscellaneous time on miscellaneous design solutions, and the indexs of their wear differ sharply. The treating of the obtained information testifies that the keeping up of identical arguments in these plants in identical balance conditions is impossible. The methodology of a state estimation of separate refrigerating plants on indexs of a technological isotropy and level of their wear is designed .
