It testifies that in system 2 processes - eduction of a pectin from raw material and lead-acid demethoxylation of the allocated pectin simultaneously proceed. The process of deesterification of an apple pectin proceeds faster at lower values рН at the expense of augmentation of the content of ions Н + in a solution, that gives to intensiveness of process lead-acid demethoxylation of an apple pectin.Uronid amounting at values рН 1,85 and 1,52 practically does not change at augmentation of duration hydrolysis. It allows to make a deduction about approximately identical activity on apple extract and allocated pectin of electrofissile water in limits рН 1,5 - 1,85 after 120 min. of a hydrolysis, as the basic part of a pectin is already allocated within the first 2 clocks of process.
