The purpose of work - improvement of the electron, structural and physicochemical factors responsible for antioxidant activity of phenols of different structure and parentage. Obtaining of new natural and synthetic phenolic antioxidants. Methods of research - chemiluminescence, gasovolumometry, spectroscopy, extraction etc. Results - the reactivity spatially - shielded phenols in radical reactions of oxidizing depending on structure and in comparison with the not shielded phenols researched. The influence steric effects on reactivity and on operation of the thermodynamic and polar factors is taken. The differences in reactivity of phenols of different structure are explained also from the point of view of differences in structure of a transient state of researched reactions The dependences between parameters of reactivity of phenols and characteristics of electron structure of molecules represented as the correlation equations. In development of researches structure - reactivity of substances with antioxidant activity is obtained series of aminophenols and learning features of their operation in key reactions of an inhibited oxidizing started. Is shown, that these features are stipulated by presence in molecules of several reactionary centers with different activity, and can be utilised for obtaining effective antioxidants in series of aminophenols. The further refinement of methods of extraction extract of natural phenols from plant material, in particular with usage of electric field.
