The work purpose - the analysis of literary data, for the purpose of definition of problems of processing of root crops, namely: their clarification and preservation of power resources. Certain problems are present at many enterprises of the food-processing industry and a restaurant economy complicate application of these or those ways of clarification of root crops. The literary review of the equipment for realisation of processes of clarification which is developed is given or used at the food-processing industry enterprises. Result of the spent literary review became, revealing of some lacks of existing ways, engine and devices for clarification tuberous root. Perspective directions of an intensification of clarification which dare by improvement existing and workings out of new ways of clarification of root crops are established.
