The methods of research - physical-chemical, functional and technological, structural, mechanical, organoleptic characteristics of the technology of functional systems with cryoprotectional action for frozen meat semi-finished products were characterized. The choice of the quantitative content of individual ingredients in the functional systems of the cryoprotectional action system has been defined. The influence of the functional formation on technological properties in frozen meat semi-finished products with cryoprotectional action was investigated. The histological and morphometric studies were conducted and described. The changes in structural and mechanical properties of model meat stuffing were defuned. The effect of replacing the main raw meat in fermented collagen raw materials, as additives in frozen meat semi-finished products was studied.
