Research methods: physical modeling - to study the effect of various factors on the storage of products, development of optimal technological parameters of storage and the establishment of statistically significant relationships - physical, mechanical, biochemical and microbiological analysis - to determine changes in the mechanical, biochemical and microbiological parameters of the product; - - analysis of variance - for determination of degree of influence of factors on quality of products which is kept; - analytical analysis - for creation of theoretical model of freezing of products, for what used methods of differential and integral calculation, theoretical bases of heating engineering and modern computer technologies. 1.
