The purpose of the project is to increase the energy efficiency of the drying process in the mass exchange module using the combined heat supply and justify the rational modes of drying thermo labile raw materials. The subject of research is the methods of drying of the the vegetable raw materials, the modes of drying thermo labile vegetable raw materials and the corresponding technological equipment. The essence of the research process is to obtain calculation formulas for determining the energy consumption of the drying process of thermo labile raw material in a mass-exchange module with an internal heater and a program for calculating the drying process in driers with combined power supply. The final result of the research work was the development of new methods for drying food raw materials, their mathematical models and equipment designs that allow efficiently concentrating and drying of food raw materials and to receive high-quality products with a high degree of preservation of food and biological value. The results obtained are confirmed by patents. The results of the work are obtained using theoretical methods of heat and mass transfer research, as well as modern experimental methods, thermophysical, dielectric, optical, mass-exchange, structural-mechanical, physico-chemical and microbiological indices, as well as methods of mathematical statistics.
