Досліджено властивості ОСВТ та вплив технологічних чинників на її фізико-хімічні властивості. Науково обґрунтовано та розроблено технологію соусів емульсійного типу з використанням олії з оптимізованим жирнокислотним складом та досліджено її показники якості та безпечності. Розраховано харчову та біологічну цінність нової продукції. Визначено ефективність прийнятих рішень Qualifying work is sanctified to development of project of technology of cold sauce of emulsive type with the use of oil the sunflower of high-olein type (OSVT). Modern tendencies in a production and consumption of cold sauces and technological aspects of production are studied. Properties of OSVT and influence of technological factors are investigational on its physical and chemical properties. Scientifically reasonably and technology of sauces of emulsive type is worked out with the use of oil with the optimized fatty acid composition and her indexes of quality and unconcern are investigational.
