У другому розділі наведено характеристику сировини, яка використовується в роботі. Обрано сучасні методи досліджень, методики та їх лабораторне забезпечення. Складено план теоретичних, експериментальних та практичних робіт. В третьому розділі розроблено комбінацій глазурі «Гляссаж» з ефектом «Леопарду». Досліджено основні показники якості розроблених глазурів, проаналізовано органолептичні показники, розраховано харчову та енергетичну цінність, а також проведено експертизу щодо виду та вмісту харчових добавок. В четвертому розділі проведено впровадження технології, шляхом розроблення технологічних карток, акту дегустацій. The first chapter presents the results of the analysis of modern trends in the production of decorative semi-finished products, in particular glazes, and summarizes the classification and characteristics by assortment and technology. The second chapter describes the characteristics of the raw materials used in the work. Modern research methods, techniques and their laboratory support were chosen. A plan of theoretical, experimental and practical work has been drawn up. In the third section, combinations of "Glassage" glaze with the "Leopard" effect are developed. The main quality indicators of the developed glazes were studied, the organoleptic indicators were analyzed, the nutritional and energy value was calculated, and an examination was conducted regarding the type and content of food additives.
