The purpose of this project is to study the patterns of changes in the biochemical composition of fruit and other local raw materials and develop technologies and recipes based on them for the preparation of domestic competitive products with high content of biologically active substances, including functional and health purposes. In addition to cultivated fruits and berries, it is planned to use sparse and wild fruits and berries (more than 30 crops), the annual harvest of which is from 1.0 to 1.5 million tons, as well as to use other local spicy-aromatic and medicinal plant resources. will give the chance to create soft drinks, products of children's and mass food, and also domestic fruit and berry wines of world level.
