Features of introduction of biologically active substances in technology of dishes and culinary products are considered. Indicators of quality of the developed dishes and culinary products with biologically active substances are investigated. Organoleptic parameters were studied, the pharmacological effect of collagen hydrolyzate obtained from secondary fish raw materials on living organisms was determined. Crystalline recipes with increased nutritional integrity and improved consumer properties due to the introduction of functional plant ingredients, recipes for corn sticks with a balanced protein-carbohydrate content, dessert technology with pronounced detoxifying properties for human use and production mousse protective action with the optimal ratio of essential nutrients.
