Glutamate concentrations in sauces and seasonings were determined using a biosensor and spectrophotometric method, and a good correlation of the results of both experimental methods and both calculation approaches was shown. The results of the study showed that the presence of sauces and seasonings in the solution does not significantly affect the value of optical absorption when determining the concentration of glutamate using spectrophotometry, which indicates the absence of significant matrix effects. It was shown that the relative standard deviation of the responses of the biosensor to the food sample was 2.7%, and the dilution of the samples did not affect the determination of glutamate concentration.
