The aim of the work is the comparative study of the formation of meat and fat productivity of different genotypes of pigs depending on the influence of paratypical factors on them. Research methods - zootechnical: determination of indicators of productivity and reproduction, as well as assessment of animals by growth and development, fattening and meat qualities; physical and chemical: physical and chemical composition of meat and lard; biometric: determination of average values and their errors, probability indicators of research results, dispersion analysis, correlation coefficients. Most of the farms in our country get pork at the level average daily gains in the range of 250-350 g. In some enterprises, this indicator varies from 600 to 800 g. Some producers use growth accelerators of various origins of domestic and foreign production to accelerate the increase of animal gains to 900-1000 g and more. As evidenced by scientific observations, enzyme preparations significantly accelerate the increase in the physical growth of animals, however, the muscle and fat tissues in their bodies do not always have time to reach physiological maturation, which negatively affects the quality of the obtained products. The research results established a number of factors that positively or negatively affect the quality indicators of the produced pork. The obtained experimental data are the basis of practical recommendations aimed at improving the quality of pig farming products in accordance with the constantly growing demands on the domestic and foreign markets.
