The purpose of the work is to establish, on the basis of experimental studies, the relationship between the fatty acid composition obtained by the chromatographic method, in particular the content of oleic acid, oil extracted by pressing from sunflower seeds, with an average content of oleic acid (not less than 54%) and a high content of oleic acid (75-90.7 %), and the corresponding value of the refractive index of these oils for further development and substantiation of reference tables for determining the content of oleic acid for sunflower oils of the oleic type by the refractometric method. Research methods – moisture content in sunflower seeds is determined according to DSTU 4811:2007; determination of the mass fraction of oil in terms of dry matter according to DSTU 7577:2014; mass fraction of crude protein in terms of absolute dry substance according to DSTU 7169:2010; the mass fraction of oleic acid in oil extracted from seeds according to GOST 30418-96; determination of the refractive index of sunflower seed oil was carried out according to GOST 5482-90 (ISO 6320-85); iodine number of oil according to DSTU 4569:2006. Samples of sunflower seeds of medium- and high-oleic hybrids with different content of oleic acid are modeled. The fatty acid composition and refractive index of their vegetable oil were determined. A relationship was obtained between the refractive index and the content of oleic acid in the studied samples, which is the basis for the development of tables of reference data on the value of the mass fraction of oleic acid in accordance with the values of the refractive index of oil for sunflower seeds with an oil acid number index of no more than 5.0 and 5.0-10.0 mg KOH/g. It has been proven that the refractometric method, which requires lower costs compared to other, more valuable ones, can identify oils of different plant origin.
