The object of research is technologies of complex processing of berries and root vegetables. The subject of research is root vegetables (Apium graveolens, Pastináca sátiva, Daucus caróta, Beta vulgaris); fruits of wild plants (Hippophae rhamnoides L., Viburnum opulus, Sambucus nigra, Sorbus aucuparia); candied vegetables (from beets, carrots, celery, parsnips); powders from derivatives of berry processing (viburnum, elderberry, sea buckthorn, mountain ash); vitaminized syrups for sugar enrichment (from the processing derivatives of viburnum, elderberry, sea buckthorn, mountain ash). Practical significance of the obtained results. The value of the expected results will consist in the development of technologies for waste-free processing of vegetables, fruits, and berries, providing practical recommendations for the use of derivatives from their processing in the composition of food and culinary products. The use of technologies of rational processing of plant raw materials, with the formation of a minimum amount of industrial waste, into food additives with functional properties will solve the problem of the shortage of useful nutrients in the diet of the population, due to the creation of products with high nutritional and biological value. The introduction of developed technologies into production will allow to expand the existing range of products with functional properties and reduce the cost of food products due to the use of cheap raw materials, while the quality and safety of new products will meet the requirements of current legislation.
