Research methods are standard methodologies of plant biochemical analysis and methods developed in the laboratory. The results of protein complex research of legumes seed of varieties of Ukrainian and foreign plant breeding were analyzed and systematized. It was shown that the studied varieties of legumes differ widely in the total protein content and 7S and 11S globulin fractions content. 7S and 11S globulins considered to be the most promising proteins for the food production. Two express methods for isolation and identification of 7S and 11S globulins of soybean seed were developed and recommended for scientific institutes which were involved in the soybean breeding of food direction. These methods enable a plant breeder to analyze a great quantity of genotypes at the most short term. The polymorphism between varieties on the electrophoresis spectrums of component composition of 7S and 11S globulins of soybean was established. The features of 7S and 11S globulins content, its ratio and component composition of genotypes of different phylogenesis origin, F3 - F8 hybrids of soybean and their paternal forms were identified. A connection between 7S globulins content and protein content in the early hybrid populations (F2 - F4 hybrids) was established. This correlation did not remain at all hybrid lines of older generations (F6 – F8 hybrid lines). A connection between 11S globulins content and protein content of soybean seed was not established. It was elucidated that the growth conditions influence on the content and ratio of 11S and 7S globulins in the soybean seeds, so that have to be introduced in the selection program of soybean genotypes of food direction as these parameters connected with the food nutritional quality. It was shown that the component composition of soybean globulins are controlled by complex genetic system with different action and interaction of genes. The analysis of the received results showed that soybean genotypes of different phylogenesis origin were characterized by polymorphism of quantity of ?, ??, ? subunits and А3, А5 and B components in the component composition of 7S and 11S globulins. These subunits and components have negative and positive influence on the man’s health, so its presence or absence in the component composition of 7S and 11S globulins should be considered in the soybean breeding on quality. The results of research work were introduced by development of new methods of estimation of quality of soybean genotypes, recommendations for breeders. The new methods can be used at the plant breeding departments of Plant Breeding & Genetic Institute, plant breeding stations and centers.
