Pressings from the noncontinuous press were superior to their counterparts from the screw press practically in all quality indices except for being higher in activity of oxidative enzymes.The new technology, in comparison with that currently in use in Ukraine, enables a 20% higher output of cognac wine materials per one ton of grapes without deterioration of quality indices.
