Methodology of high technology creation of products with modeled functional-technological properties was developed: pure-shaped and jellylike fruit system by directed activation of raw materials endogenous complexes; product on basis of leguminous plants (chick-pea, pea, haricot) by means of induced autolysis of reserve proteins, polysaccharides, antinourishing substances. The principle approaches to biologically active agents making, which contain inhibitors digestive enzyme were elaborated: phenols and phospholipids of rape seed, mucus of flax.
