For food technologies taking into account physical and chemical effects more suitable are introductions of mechanical and acoustic energy, transformations of which are related to the direct power operating on a gas phase through a mezhfaznuyu surface. In research grounded realization of such mechanical influences through the change of pressures in a gas environment above the surface of gas-liquid environment. For creation of mathematical model and estimation of influences the synthesis of physical model is carried out as a quasi-elastic system with bringing the up-diffused liquid phase over to the collected mass on the basis of principle of Releya. Through the size of gas-retaining ability of the system quasi-elastic properties are certain and the calculations of its inflexibility are executed. Analytical models which touch hydrodynamics of circulation gas-liquid streams in massoobminnykh vehicles with generuting in them of mass forces are developed, and also in сиstemakh transporting of pipeline streams of the special geometry with variables on a size and direction of forces inertia and including at the level of soft dynamic shots.
