The new data on biological and technological properties of meat and its functioning in these systems was become. On base of strains Lactobacillus plantarum, Lactobacillus casei ssp. rhamnosus, Lactobacillus casei ssp. casei, Kocuria rosea, and Staphylococcus simulans was created 3 new starter culture ("LRR"and "KPK", "MKS") for fermenting of meat.
