Technology and assortment of albuminous-carbohydrate and albuminous-vegetable ready-to-cook foods are worked out. The complex of their consumer and technological properties is certain, terms and shelf-lives are reasonable. Recommendations are worked out on the use of ready-to-cook foods in the production of culinary goods, namely for preparation of the hammered together sweet dishes (самбуков, souffle, creams) and creamy cream. Normative and technological documentation (3 TU) is worked out, introduction of new technologies of ready-to-cook foods and products is carried out on their basis on the enterprises of food industry and restaurant economy.5481
