The content and localization of toxic substances : nitrates , heavy metals , radionuclides and natural toxicants ( psoralen and salts of oxalic acid ) was investigated . The effective ways to reduce toxic substances in plant material were developed. With the help of mathematical modeling environmentally friendly products on the basis of the studied vegetables domestic breeding were developed . The commodity quality assessment of products was developed and the changes in their consumer properties during storage were investigated . The increased food and biological value of the developed products and their treatment - preventive orientation by examining the antioxidant and radioprotective properties was xperimentally demonstrated . As part of the state budget theme were concluded two themes : № 32-12 D "Study and theoretical basis of accumulation of toxic substances root vegetables " (funding 10 thousand UAH) and № 23-13-14 D "Study the accumulation of toxic substances and vegetable raw materials theoretical justification for the selection of environmentally friendly , biofortificated varieties of products to create a healthy diet " (funding 38.0 thousand UAH ) .
