3. The current assortment of grapes today do not always allows to obtain high quality wines . In their place there are varieties of new selection , just adapted to local growing conditions. Picking and refining the technology of preparation of these wine grape varieties may provide a consistently high quality vynoproduktsiyi and expand its assortment . Assessment of quality new and exotic varieties carried by the universal methods NIViV " Maharach " to determine the quality of the grapes. This technique makes it possible to explore the technological possibilities of grapes and thus reduce the cost of manufacturing, the development of new grape varieties justify rational scheme of its processing.
