The purpose of work is creation of innovative resursooschadnikh technologies of the deep processing of artichoke for satisfaction of necessities of population in the vitally necessary functional products of feed with application of modern methods of treatment of raw material, and also to the project of normative document on new products and technological instructions. New technology of low temperature treatment of artichoke and cryolysis is developed, that allows to get 50-55 % free fructose which is easily mastered the organism of man and brings strengthening over of the immune system to the decline of index of glikemii. New refrigeration technologies of processing of the Jerusalem artichoke in dribnodispersni additions differ from traditional the exception of thermal treatment of raw material and based on the use of cold on the stage of preparation of the Jerusalem artichoke, freezing and low temperature dribnodispersnogo growing shallow. Technologies enable to get additions from the Jerusalem artichoke as shallow dispersible powders with the sizes of particles in ten one times less than, than at the traditional growing shallow.
