During the scientific research the selection of non - traditional and fungoid raw materials was conducted. New methods of complex processing and effectiveness increasing of selected raw materials were created. Meat products technologies for functional and functional and gerontological diet with the use of non - traditional and fungoid raw materials were created. Safety of created products was proved in in-vitro and in-vivo medium. Complex evaluation of adequacy of products is proved by medico-biological research.
