Children nutrition of in preschools today does not meet the optimal nutrition and requires correction. Significant deviations in ensuring the daily needs of children in basic essential nutrients and minor substances are found. To optimize the structure of diets for pre-school children, along with such traditional activities as providing all the food in sufficient quantity and adequate quality, development and introduction of new technologies into canteen menu is proposed including functional with essential substance of age. Guidelines for the development of diets for children in pre-school are developed according to modern requirements for optimal nutrition, taking into account the current legislation.5481
