The objects of investigation are the biotechnologies of production of solid, soft and fermented milk products. Purpose of investigation is development and introduction in serial production of the domestic biotechnologies of producing of solid and soft cheeses, sour cream, yoghurt, kefir, ryazhenka and other fermented milk products character by the reduced term of fabrication. Methods of investigation: there are used the traditional and recent biotechnological, physical, chemical, microbiological and organoleptic methods of study of the basic indices of quality of cheeses and fermented milk products, properties of isolates and bacterial concentrate. Sphere of use: Ukrainian enterprises, which produce foodstuffs and reprocess milk.
