It was investigated the formation of aromatic compounds (nanomarkers of flavor) under the influence of heat treatment and fermentation by lactic acid bacteria on milk-fat mixtures, was created a database of the aromatic compound content in dairy products with high level of fat, correlations between the content of such compounds and organoleptic characteristics of these products were establishted.
