The microflora drying mixes and meat products from their use was investigated. The 10 strains of microorganisms capable of development under conditions of pickles raw meat and investigated their physiological and biochemical properties were extracted and identified. Studied the relationship between of selected strains and 3 variants developed effective drug for bacterial salted raw meat: Iprovit- Sc, Iprovit-LB02 and Iprovit- LSt.
