The new enzymatic-chemical methods of Arg assay based on ADI, o-phthalaldehyde and 2,3-butanedionemonooxime (ADI-OPA and ADI-DMO methods, respectively) with spectrophotometric and fluorometric modes of detection were developed and tested . The proposed ADI-OPA method was tested on real samples of wines and juices in comparison with enzymatic (based on arginase I) and referent chemical methods. One of the developed method (ADI-OPA) was shown to be suitable for accurate and selective analysis of Arg level in drinks. The proposed methods correspond to the best foreign prototypes.
