The purpose of the work is to create a new ecological dish that will expand the range of confectionery. Research methods - analytical and empirical analysis. The work involves the selection and analysis of commodity characteristics of a new type of flour confectionery products with edible coating; development of technology of ecological dishes, which will also allow to expand the range of flour confectionery products. The present state and prospects of development of edible coatings have been analyzed. The organoleptic, physico-chemical, ergonomic parameters of the developed product, as well as its influence on the ecology have been investigated.
