The work is devoted to the justification of theoretical and methodological and practical bases of formation of a category of wines controlled denominations of origin. The technologies of white and red table wines made in the aspect of maximum CNR identification and conservation of the nature of the place of origin of wine. The regularities of changes in the physico-chemical parameters in the basic technological processes. Identified agricultural practices for the implementation of the fourth stage of the development of technology: sowing grass (grassing), a complex "green operations", removing the leaves in bunches zone. Defined modes fermentation wort and mash in a terroir Chabot. The positive effect of receiving extracts of white varietal wine in barrels "barrique" on the lees and bottle aging process. Developed and approved normative documentation: Position: wine of controlled origin names, guidelines for their implementation, technological instructions on red and white table ordinary vintage wines.
