Their high nutritional and biological value is proved. It is scientifically substantiated the technologies of dessert products on the basis and using developed semi-finished products.The normative documentation on protein-hydrocarbon semi-finished products based on skimmed milk has been developed.The main results of the work found the implementation in catering business outlets in Ukraine.
