The complex analysis of domestic and foreign literature sources on the problem of use of protein-carbohydrate dairy and vegetable raw materials in the technologies of semi-finished products for the assortment of whipped dessert products has been carried out.The modes of the modified method of complex deposition of protein substances of skim milk with the help of plant material are substantiated, the activation process of the functional and technological properties of a protein-carbohydrate bundle has been investigated.Technological schemes of protein-carbohydrate semi-finished products are developed.The complex of data, which characterizes the quality of developed semi-finished products, is obtained. Their high nutritional and biological value is proved. It is scientifically substantiated the technologies of dessert products on the basis and using developed semi-finished products.The normative documentation on protein-hydrocarbon semi-finished products based on skimmed milk has been developed.The main results of the work found the implementation in catering business outlets in Ukraine.
