The nanocomplexes of biogenic metals (Fe, Mg, Zn, Mn) are an effective factor in the regulation of alcoholic fermentation, which leads to increased catalysis of biochemical transformations. They are used as an additional yeast food source. The introduction of zinc, manganese and magnesium nanometals preparations is effective only at the stage of growing yeasts from a pure culture by adding to the nutrient substratum — agar and wort agar. The initial requirements for the development of the technological process for the production of bioethanol from sugar-containing raw materials (molasses) using nanometals was prepared. The guidelines for the use of nanopreparations in technological processes was developed.
