The method of obtaining a food product - a syrup made from juice of sorghum of sorghum is developed. The carbohydrate composition of syrup has been determined, which confirmed the expediency of its use as a sugar substitute in various branches of the food industry. Studies have been conducted on the modification of bagasse from sugar sorghum in order to increase its adsorption properties. Bagrant-based sorbents have been tested for purification of heavy metals contaminated by cations of sewage and soils. The methodical recommendations for the processing of sugar sorghum for food and technical purposes and technical conditions for food syrup from sugar sorghum have been developed.
