The work involves the selection and analysis of technological characteristics of a new type of flour confectionery manufacturers with the same coating / film; improvement of technologies of ecological ware which will also allow to expand the range of flour confectionery producers.
The current state and prospects of development of true coatings / films are analyzed. Organoleptic, physicochemical, ergonomic indicators of the improved product, as well as its impact on the environment have been studied.
